“FAT GIRL IN A LIL SUIT” ASIAN SALAD

Carbs. I LOVE them.  ALLLLLL of them! And they love me! Sadly, much like the men I date, carbs only leave me excited for a short period of time & end up making me sad.  😄

Putting on a bathing suit for the first time in the Spring can be scary. I hit the beach last week with my girls & was NOT happy with how I was rockin my swimsuit.  So, since I refuse to give up beer, I’m trying to make stuff with more veggies & protein.

I’m new at this food blogging thing so I PROMISE I will take more pics when cooking/combining meals.  I get so involved in making something yummy I totally forget. Which really means I wanna get to the eating!  Can’t lie!

Now not everything I eat is made from scratch. If there’s a shortcut I say take it! I buy an Asian Salad mix from the grocery store. Pre-made so you don’t have to cut up so many veggies. I add some stuff to the pre-made mix to give it some extra flavor & to make it more of a meal.

You can do these with any pre-made salad mix. The Asian blend is one of my personal favorites because it has lots of crunch. Love that!

You’ll need:

  • 1/2 A RED PEPPER
  • 1/2 A GREEN PEPPER
  • 1/2 A YELLOW PEPPER
  • 1/2 OF A SMALL BAG OF PEA PODS
  • 14 oz BAG OF FROZEN SHELLED EDAMAME
  • GRILLED CHICKEN OR SHRIMP
  • MAKOTO GINGER DRESSING
  • FRESH PARSLEY

Chop up the peppers into bite sized pieces and put into a big mixing bowl.  Cut the pea pods in half OR leave whole & put into the mixing bowl. I like to cut mine in half cause I’m so dainty. Haaaaaaaaaa!

Microwave the edamame according to the directions in a microwaveable safe bowl & drain in a colander. While the edamame is draining & cooling, combine the pre-made Asian salad mix in the mixing bowl with the peppers and pea pods. Usually these mixes come with dressing and some nuts/crunchy noodles. Put those to the side.  Once the edamame is cool, add to the salad. Chop up a handful of fresh parsley & add to the salad mix. Combine all the veggies together.

Now, in regard to meat/fish, you don’t HAVE to add it to the salad. I make my own baked chicken in a dutch oven. SO good!  When it cools, it falls apart & I add the shredded chicken to the salad. You can add grilled chicken, cooked shrimp, rotisserie chicken….whatever you like.

Add the meat/fish or just roll with the veggies.  Once you mix it all together, add dressing. You can add the dressing that came with the salad mix.  Usually this isn’t enough for me after I add the extra veggies & chicken.  IF you need more dressing, I recommend adding some Makoto Ginger Dressing.  It is tasty!  Make sure you shake it up well before adding to the salad.  Add about 1/4 of a cup & then toss the salad.  I realize some folks like more dressing than others but this amount is usually good for me.  Top with the slivered almonds/crunchies that came with the salad & you have a damn festive salad that is AWESOME for dinner or to take for lunch. I’m one of those fat chicks that likes the act of eating.  I can do meal replacement shakes but I like to eat! With this, adding the meat & extra veggies makes it more of a meal. And there’s a big crunch factor with this salad so you don’t eat as much.

It’s not going to make you skinny but for someone like myself, it beats starving or having nothing but protein shakes.  Me with no food=throat punching someone.  I ain’t trying to catch a charge…..as we say in the South…..and not eating means I’d end up crankier than normal.  LOL!   Great salad with lots of protein & crunch so you don’t end up hungry & in jail.  What else can ya ask for?!
