Food.  I love it.  Almost as much as I love my dogs.  It’s always there. In good times, bad times, happy times, that time you were fucking cheated on…..ALWAYS there!  No judgement.  Now, before I get to the food, I want to share a bit about me.  I’m a former radio chick that has a passion for RNR, laughs and food!  I love to cook & I love to eat!  To quote William Hung “I have no formal training”  🙂  Google him kids if your clueless with the reference.  I’ve worked in restaurants as a waitress & a bartender but I’m NO chef.  I just make stuff I like.  Luckily, others seem to like my food too!  My recipes are random.   I just throw stuff together that I dig & it works.  Sometimes I take an existing recipe & tweak it to my liking.  Over the years I have developed a decent palate. I seem to be able to blend flavors together well.  My hope is that you’ll dig what I make & try it at home!

I’m well aware of how many folks are health conscious in today’s society.  I was married to an athlete, my Dad is an athlete and I used to be in great shape. Over the years I’ve become “curvier”. Getting old blows.  Some of my recipes will be healthy in numerous ways.  Some of them are straight up fat girl comfort food recipes.  I think you need both in life!  I did the “eat nothing but chicken & broccoli” thing when I was in my 20’s. I was skinny but man I was one ANGRY bitch!  I enjoy chicken & broccoli BUT my mindset is different now.  I’d rather be 10 lbs too heavy than so hungry I wanna throat punch the dude pushing the dessert cart around.  When I’m on my deathbed I want NO regrets.  Have the cookie!  Eat the pie!  Workout with kettlebells!  DO IT ALL baby!

Now, if you are a “measure everything” kinda person you may not enjoy my recipes. I throw stuff in and roll by sight & taste.  My goal is to make tasty stuff easy.  NO ONE really has time to spend hours in the kitchen anymore.  Besides, who the hell would want to?  UNLESS there’s booze involved, I ain’t spending all damn day in the kitchen!

SUMMER ORZO SALAD

In the Spring and Summer I REALLY enjoy going to farmer’s markets & produce stands.  SO many good veggies and fresh herbs!  YUM!  I threw some together with some orzo pasta & it turned out to be damn tasty!  Give it a try!  You can add as many or as little veggies as you’d like.  Personal preference!  I’ll give ya a list of what I used and an estimated guess of how much.  Enjoy! 🙂

  • Red/Green/Yellow Peppers
  • Red Onion
  • Block Feta Cheese
  • Kalamata Olives
  • Sundried Tomatoes
  • Fresh Parsley
  • Fresh Dill
  • Lemon
  • Olive Oil
  • Sea Salt
  • Pepper
  • Crushed Red Pepper

Cook a small box of Orzo Pasta according to directions.  I like mine a bit al dente so I cook it about 2 minutes less than advised on the box.

Chop the veggies into small pieces while the pasta cooks & put into a large mixing bowl.  I used about 1/2 of each pepper and about 1/4 of the red onion.  I used sundried tomatoes in olive oil but I dry them before putting them into the mixing bowl.  I used about 6/7 pieces.  I cut up approximately 15-20 kalamata olives.  Use the whole block of feta cheese…I broke it up into small chunks by hand.  I use parsley leaves BUT I also use a bit of the parsley stem. I like the flavor of parsley…totally up to you.  You can chop it with a knife or feel free to use kitchen sheers to cut it up. They work great! Fresh dill is totally optional.

Once the pasta is done, strain in a colander and rinse with cold water.  Let the pasta cool for 10-15 minutes.  Before adding it to the veggie mix make sure it’s cool and that all the water has drained. Stir the pasta & the veggies together.  Add fresh lemon juice…about 1/2 the lemon & some lemon zest if you are feeling sporty!  Add extra virgin olive oil..approximately a 1/2 cup.  I like to add less and mix and THEN see if I need more.  Everyone has a personal preference but I don’t like my salads to drown in dressing.

Add sea salt, garlic salt, fresh pepper and a DASH of red pepper flakes.  Stir & give it a taste!  I tend to use less salt since more can always be added.  Pisses me off when I try a dish & the salt content is so high I almost stroke out!  More can always be added but it can’t be taken out!  \m/

Stir again & taste.  If you think it rocks then BOOM!  DONE!  Throw it in the fridge for an hour & then eat!  Be advised that orzo DOES soak up olive oil so you may need to add a swirl or two before serving.

Makes plenty and the leftovers rule!
